Kale Tabbouleh

  • 2 bunch fresh green kale

  • Green onion (as much as you like I put a whole bunch in mine)

  • 2 to 3 fresh tomato’s (or as many as you want!)

  • 2 fresh lemons

  • Pink salt to taste

  • Olive oil (as much as you need I like lots of it, about 1/4 cup)

  • 2 Tbsp burgul cracked wheat (you can get it any international market)


  • Chop the kale, green onion, and tomatoes.

  • Put the cracked wheat in a bowl add add 1/4 cup water and cook it in the microwave for about 1- 2 min until it’s fully cooked. Then let it cool down. (Use quinoa for a gluten free option!)

  • Put all the chopped ingredients in a large bowl - add the cooled down burgul, salt, olive oil, and the 2 lemon's juice.

  • Mix all the ingredients and you are done! A healthy snack for the week.
