Vegan/Gluten Free Tumeric Chocolate Chip Cookies

  • 1/3 cup oil (coconut or olive)

  • 1/2 cup organic brown sugar

  • 1 flax egg

  • 1 tablespoon vanilla extract

  • 1 cup almond flour

  • 2 tablespoons ground turmeric

  • 1 cup oat flour or gluten free flour blend

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup add-ins (I use vegan choc chips and or nuts)

Preheat the oven to 350°F. In a bowl, prepare flax egg and let sit 5-10 minutes.

Add other ingredients together and mix well. You want the dough to be pretty firm, so add a few tablespoons of flour or water to achieve the right consistency.

Place 2 inches apart on cookie sheet that has been sprayed or lined with wax paper. Cook at 350 degrees for 10-12 minutes, depending on the thickness of the cookie. Edges will be light golden brown; let cool 15 minutes and serve!
