This vegan sandwich is quick, easy and delicious.
Perfect for summertime!
1 - 8oz package Tempeh (crumbled or sliced)
2 - Green Onions, diced
1/4 - Red Onion, diced (Optional)
3 - Celery Ribs, diced
1 Cup Vegan Mayonnaise
1 TBSP Mustard
Salt and Pepper to taste
Crumble or Slice the tempeh and mix with the onion, celery, mayo, mustard. Add Salt and Pepper to taste.
You can add in diced carrots, dried cranberries, chopped nuts, relish.
Serve on your favorite bread; toasted or soft. I like to use lettuce cups and make lettuce wraps as well.
Store in a covered container and use within 5 days.
