Herbed Cauliflower “Rice” with Wild Salmon & Mustard-Lime Sauce

Serving: 4


4 4-6 ounce pieces of wild salmon

4 TBLS of fresh dill, chopped


½ lime

salt and pepper to taste

Cauliflower Rice:

1 TBLS extra-virgin olive oil

1 package of frozen cauliflower rice

3 TBLS fresh dill, chopped

¼ cup parsley, chopped

sea salt and black pepper to taste

Mustard lime sauce:

4 TBLS Dijon mustard

2 TBLS fresh lime juice

pinch of black pepper

Preheat oven to 350.

Place salmon fillets on a cookie sheet coat olive oil evenly on salmon add dill, salt & pepper and place in oven for 15-25 minutes, depending on thickness of salmon. Save lime juice for later.

For the “rice”, heat olive oil in pan on medium. Add frozen cauliflower and stir 5 min. Add the rest of the ingredients and stir for additional 10-15 min.

While rice is cooking make the mustard-lime sauce by adding all ingredients in a small bowl and set aside.

When salmon and rice are done, place ¼ of rice on dish, salmon on top and squeeze the lime juice over salmon and rice. Top with mustard lime sauce. Enjoy!!
